Ingredients:

– 2 tablespoons butter

Instructions:

1. Heat the broth in a saucepan over low heat. You want to keep it warm throughout the cooking process so that it can be easily absorbed by the rice.

2. In a separate large skillet or saucepan, melt 1 tablespoon of butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the garlic and cook for another minute.

3. Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.

4. In the same skillet, melt the remaining tablespoon of butter. Add the Arborio rice and toast it for a few minutes until it becomes slightly translucent around the edges.

5. Pour in the white wine and stir until it is absorbed by the rice. This will add a depth of flavor to the risotto.

6. Begin adding the warm broth to the rice, one ladleful at a time. Stir constantly and allow the liquid to be absorbed before adding more. This process will take about 20-25 minutes, and the rice should be creamy and al dente when done.

7. Once the rice is cooked, stir in the cooked mushrooms and Parmesan cheese. Season with salt and pepper to taste.

8. Remove the skillet from heat and let it sit for a few minutes to allow the risotto to thicken.

9. Serve the mushroom risotto in bowls, garnished with chopped parsley and additional Parmesan cheese if desired.
